The Highland Shortbread.

This is the traditional Scottish Shortbread. Made from just three ingredients, shortbread cookies are easy to make and absolutely delicious.

The recipe is taken from the Feill Cookery Book, wich was publised in 1907 and is freely available from the Internet Archive. (Page 276)

Ingredients

Steps

  1. Work the flour and sugar into the butter,
  2. then halve the dough and knead it out into two rounds,
  3. nick round edges with thumb and prick with fork,
  4. divide the rounds in four,
  5. and bake in a moderate oven.
